Prepare the dressing. Peel the garlic and put it in a blender bowl. Add all the other ingredients of the dressing and grind to a homogeneous consistency.
Disassemble the broccoli head into inflorescences and cut into small pieces. Peel the onion and chop it very finely.
Mix the raw broccoli, raisins, onions and seeds in a large bowl. Pour over the dressing and leave to soak for 5 minutes.
