Step-by-step cooking
Step 1:
How to make tiramisu with cottage cheese? Prepare the products. To impregnate the cookies, brew strong coffee. Use alcohol if the dessert is intended for adults only. Instead of cognac, rum or aromatic liqueur are also suitable.
Step 2:
Add a cinnamon stick to hot strong coffee and leave it to cool completely.
Step 3:
Pour a teaspoon of cognac into the cooled coffee.
Step 4:
Next, prepare the cream. Prepare the products for him. Take cottage cheese soft, not dry, with the lowest fat content (I had 1.8%). It can be briquettes (like mine) or soft cottage cheese in tubes. Depending on what kind of cottage cheese you take, the cream turns out to be more or less dense: with soft cottage cheese in tubes, it will be more homogeneous, airy, without grains.
Step 5:
How to make cream? Divide the eggs into whites and yolks. Place a fireproof bowl on a pot of boiling water so that the bottom does not touch the water — this will be a water bath. Pour the yolks into a bowl and directly in a water bath, whisk them with 30g of powdered sugar until pale yellow.
Step 6:
Pour the remaining cognac into the yolk mass and beat it until smooth for another 2 minutes. Remove the cream from the water bath and whisk it for another 5 minutes until thickened.
Step 7:
Lightly beat the cottage cheese with a mixer.
Step 8:
Put it in the yolk cream, mix until smooth.
Step 9:
Separately, with a mixer at a low speed, whisk the whites with salt, then increase the whipping speed and enter the remaining powdered sugar in parts. Beat the whites to steady peaks.
Step 10:
Gently add the whipped whites to the curd cream (one spoonful at a time) and mix it until smooth.
Step 11:
Grate the chocolate on a fine grater. To make it easier to do this, pre-hold the chocolate in the freezer for a while.
Step 12:
Dip Savoyardi in coffee with cognac and put it on the bottom of the cremans.
Step 13:
Spread the curd cream on top, smooth it out.
Step 14:
Sprinkle the cream with grated chocolate. Repeat the layers depending on the height of the cream. Put the dessert in the refrigerator for 2-3 hours for impregnation. Garnish the finished dessert with mint and grated orange peel (it is perfect for this dessert). Serve to the table. Enjoy your meal!
You can cook this dessert not in portioned cremans, but in one large form. To make the recipe even cheaper, bake Savoyardi cookies yourself. We have a lot of recipes for its preparation on our website.
Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.
It is important to carefully consider the choice of cottage cheese. A low-quality product can spoil the finished dish, as it directly affects the consistency, taste and final result. Choose fresh, natural cottage cheese, without foreign impurities, signs of spoilage (unpleasant smell, non-uniform color, separated serum). Do not forget to pay attention to the consistency (dry, moist, homogeneous or grains, soft or pasty), as well as the fat content of the product.
Important! The size of the mold must match the number of ingredients. If you do not have a shape of a diameter suitable for the recipe or you want to bake a pie or a cake of a larger or smaller size, an article about how to make the right calculations and not make a mistake will help, how to choose the shape of the desired diameter .
