    Next, prepare the cream. Prepare the products for him. Take cottage cheese soft, not dry, with the lowest fat content (I had 1.8%). It can be briquettes (like mine) or soft cottage cheese in tubes. Depending on what kind of cottage cheese you take, the cream turns out to be more or less dense: with soft cottage cheese in tubes, it will be more homogeneous, airy, without grains.

    How to make cream? Divide the eggs into whites and yolks. Place a fireproof bowl on a pot of boiling water so that the bottom does not touch the water — this will be a water bath. Pour the yolks into a bowl and directly in a water bath, whisk them with 30g of powdered sugar until pale yellow.

    Pour the remaining cognac into the yolk mass and beat it until smooth for another 2 minutes. Remove the cream from the water bath and whisk it for another 5 minutes until thickened.

    Separately, with a mixer at a low speed, whisk the whites with salt, then increase the whipping speed and enter the remaining powdered sugar in parts. Beat the whites to steady peaks.

    Gently add the whipped whites to the curd cream (one spoonful at a time) and mix it until smooth.

    Grate the chocolate on a fine grater. To make it easier to do this, pre-hold the chocolate in the freezer for a while.

    Dip Savoyardi in coffee with cognac and put it on the bottom of the cremans.
