What is lean dough? Even the name speaks for itself, this dough is prepared in lent for lean baking. From this dough, you can bake pies, buns, pie. Everything turns out very tasty. Lean dough is prepared absolutely without any muffin. There are no eggs, milk, kefir, sour cream, butter in it. The dough is prepared only on water with the addition of vegetable oil. The recipe uses sunflower oil, but you can also take olive oil or any other. The main thing is that the oil is refined.
1. Pour ice water and sunflower oil into a bowl. The water should be not just cold, but icy. To do this, it must first be kept in the freezer for a while. The oil is suitable only refined, odorless.
2. Beat the water with oil until a whitish emulsion is obtained. You can beat it with a mixer or use a stationary blender.
3. In the resulting emulsion, sift the flour and add a pinch of salt. Add flour not all at once, but in parts. Flour may need a little less or a little more. Knead a soft and elastic dough. The dough does not stick to your hands.
4. Roll the dough into a bun and send it to a bowl. Cover with a towel or lid, leave for 15-20 minutes. Although there is no yeast in the dough, it also needs a little "rest".
5. Immediately before the process of making pies, we still knead the dough thoroughly. During the rest, it has become even more elastic, it is a pleasure to work with it.
