Cooking method

1. Sakura leaves and flowers are placed in a container with water, left for an hour to remove excess salt.

2. Pour sugar into hot boiled water, mix until the crystals are completely dissolved, add food coloring.

3. In a container with the resulting syrup, pour rice flour, mix thoroughly, cover with a lid or cling film, leave for two hours.

4. As soon as the rice flour absorbs water, the mass will become like dough, we form small thin cakes from it.

5. In each tortilla we spread a little bean paste (about 15 grams each), we fold it into a neat envelope.

Each mochi envelope is wrapped in a sakura leaf, decorated with a cherry blossom at will.
