Put the saffron. Put the rice and stir. In this state, bring the paella to a boil. It should boil for five minutes. Then make a small fire and leave to simmer for 15 minutes. Then remove the pan from the stove. Immediately cover it with foil, and then wrap it carefully in a kitchen towel. So let the paella stand for five minutes. During this time, cut the greens.
