Cooking method

  1. Step 1:

    Step 1

How do you make this simple but tasty "Vostorg" salad with chicken and Korean-style carrots? First, gather the ingredients from the list. Instead of chicken fillet, you can use drumstick meat. You can swap the button mushrooms for other mushrooms, such as chanterelles or porcini.

  2. Step 2:

    Step 2

Wash the chicken fillet, pat it dry, and boil it in salted water until done, about 20 minutes. Remove the cooked fillet from the broth, cool it, and cut it into small cubes. Instead of boiling, you can bake the chicken in foil in the oven or pan-fry it in vegetable oil.

  3. Step 3:

    Step 3

Lift the Korean-style carrots out of their marinade and pat them dry. If the shreds are very long, you can cut them into shorter strips. You can make the Korean-style carrots yourself. See the relevant collection in the link below the recipe.

  4. Step 4:

    Step 4

Wash the mushrooms, dry them, and cut them into small slices.

  5. Step 5:

    Step 5

Cut the cucumber into matchsticks. If the skin isn't tough, damaged, or bitter, there's no need to peel it.

  6. Step 6:

    Step 6

Cut the onion into small cubes.

  7. Step 7:

    Step 7

Heat a skillet over medium heat. Add the mushrooms and onion and, stirring, cook off the excess moisture. Pour in the vegetable oil and fry, stirring, for 3 minutes. At the end, season the mushrooms with salt and pepper.

  8. Step 8:

    Step 8

Set a 5.5–6 inch (14–16 cm) plating ring on a plate. For the first layer, add the mushrooms and onion and drizzle a thin layer of mayonnaise on top. I put the mayonnaise in a piping bag and snipped the tip — it's easier than using a spoon. Try to pack each layer down well, so the salad won't fall apart once you lift off the ring.

  9. Step 9:

    Step 9

Spread the chicken fillet over the mushrooms and drizzle it with mayonnaise too.

  10. Step 10:

    Step 10

Add the cucumber matchsticks as the next layer and pipe a crosshatch of mayonnaise.

  11. Step 11:

    Step 11

The last layer is the Korean-style carrots. You don't need to drizzle mayonnaise over it. Garnish the top of the salad with chopped herbs, slices of fried mushroom, and nuts. By the way, there's a salad with a similar set of ingredients called "Orgazm."

  12. Step 12:

    Step 12

Carefully lift off the plating ring before serving. Enjoy!

  • Buy fresh medium-sized mushrooms, snow-white and free of spots, damage, or any smell of rot. They shouldn't feel slimy. Rinse the mushrooms thoroughly to remove any dirt under a stream of warm or cold water. Cut out any spoiled spots. Tiny mushrooms up to 3/4 inch (2 cm) don't need to be cleaned at all — just rinse them well. Larger button mushrooms are best peeled of their thin skin.
  • It's better to make the mayonnaise yourself — it'll be tastier and healthier. See some interesting homemade mayonnaise recipes here. You can also dress the salad with sour cream or plain yogurt instead of mayonnaise. Use them on their own or mixed with mayonnaise in any ratio you like — that will cut down the calories.
