Noodles with Vegetables and Soy Sauce
An incredibly fast option for dinner or lunch! Noodles with vegetables and soy sauce are an easy, fairly quick dish that doesn't call for any special cooking skills. All you need to do is chop the vegetables and boil the noodles ahead of time. The rest of the cooking takes minimal time and effort.

- In a separate pot, boil water and add the noodles. Salt the water and bring it back to a boil. Cook the noodles until done — the cooking time is on the package. Drain the hot water and set the cooked noodles aside; you'll need them a little later. In a small bowl or deep dish, make a special sauce for the noodles and vegetables. Mix the soy sauce with half of the sesame oil. Add a little sugar to balance the flavor and whisk all the ingredients together by hand until smooth. Prepare all the vegetables for the dish. Peel the onion, rinse it, and cut it into half-rings. Peel the carrot and cut it into thin strips. Wash the bell pepper (using peppers of different colors is best), remove the stem and inner seeds, and cut it into strips. Wash the broccoli too and break it into florets. Rinse the mushrooms in cold running water and slice them. Get a wok ready and set it over the heat. Pour in the remaining sesame oil and heat it to its hottest. Add all the chopped vegetables and stir-fry them over medium to medium-high heat, stirring constantly with a spatula so they don't scorch. Cook the vegetables for about 5 minutes, or until they're browned and tender. Then pour in the rice wine and stir it well into the fried vegetables. Next, add the cooked noodles to the pan with the vegetables and pour in the special soy-sauce-and-sesame-oil sauce. Toss everything together well so the sauce coats all the vegetable pieces and is evenly distributed. Serve the noodles with vegetables and soy sauce right away, sprinkled with chopped green onion. Enjoy!
