Separately, boil water in a saucepan and pour the noodles. Add salt to the water and bring the water in the pan to a boil again. Next, boil the noodles until tender. The cooking time is indicated on the product packaging. Next, drain the hot water from the pan, and put the finished noodles aside - you will need it a little later.
In a small bowl or deep plate, prepare a special sauce for noodles with vegetables. To do this, mix soy sauce with half a serving of sesame oil. Add a little sugar for a balanced taste and mix all the ingredients well with a manual cooking whisk until smooth.
Prepare all the vegetables necessary for the dish. Peel the onion, rinse and cut into half rings. Peel the carrots and cut them into thin strips. Bulgarian pepper (it is best to take pepper of different colors) is washed, cleaned from the peduncle and internal seeds, and then cut into strips. Broccoli is also washed and divided into inflorescences. Rinse the mushrooms in cold running water and cut into plates.
Prepare a wok-pan and put it on the fire. Pour the remaining sesame oil into it and heat it to the maximum. Next, pour all the chopped vegetables and fry them over medium or slightly higher heat, stirring constantly with a spatula so that they do not burn. Cook the vegetables for about 5 minutes or until they are browned and soft. And then pour rice wine into the pan and mix it well with fried vegetables.
Next, put the boiled noodles in a frying pan with vegetables and pour in a special sauce for a dish made from a mixture of soy sauce and sesame oil. Mix all the products well together so that the sauce covers all the pieces of vegetables and is evenly distributed.
Serve noodles with vegetables and soy sauce immediately on the table, sprinkled with chopped green onions.
