Classic Lasagna dough

Thin dough will make the lasagna perfect and very tasty! Many of my friends use purchased sheets for lasagna (I admit, until recently I was among them). I recently learned from a colleague that she successfully makes the dough herself. And I decided to experiment. Everything worked out the first time! Previously, I didn't even think about the fact that it's very easy to cook such a dough. And it can also be prepared for the future and stored in a hermetically sealed bag for about 2 months.

The dough from the specified number of ingredients will be enough for lasagna, designed for about 4 people. So let's get started.

Put the water in the freezer for 30 minutes - let it wait its turn there.

Sift the flour with a slide onto a clean work surface. In a separate container, beat the eggs with a fork, then, making a small depression in the flour with your hand, pour the egg mass into it, add salt.

Mix the dough very carefully, pouring olive oil in small batches. When the mass takes on a dough-like appearance, pour ice water into it in parts and knead the dough to a soft and plastic state. At the same time, the dough should not be tight and too steep.

Divide the dough into several equal parts, form a tourniquet from each. Then roll out the bundles as thinly as possible (sprinkle the work surface with flour). Cut the rolled dough into rectangles of the desired size.

Fold the rectangles in layers, shifting each of them with parchment or paper towels (so as not to stick together). Leave to dry for about three hours (just not in direct sunlight!)
