Honey Mustard Sauce

A wonderful zesty sweet-and-sour dressing. The right sauce can open up a dish in a whole new way, making it that much tastier. This versatile sweet-and-savory sauce of honey, mustard, and olive oil pairs with meat, poultry, and fish, as well as fresh vegetable salads.

  1. Step 1:

    To make honey mustard sauce you'll need: 2 tbsp liquid honey; 2 tbsp mustard; 3 tbsp olive oil; 1 tbsp lemon juice; freshly ground black pepper; and a pinch of salt.

    In a bowl, combine the liquid honey, olive oil, mustard, and lemon juice. If the honey has crystallized, melt it first. Whisk everything well until smooth. It's best to just stir the ingredients together at first, so the olive oil blends with the honey and lemon juice, and only then start whisking properly. If you start whisking right away without mixing first, the light olive oil can splash out of the bowl.

    Add salt and pepper to the sauce and whisk again until the salt dissolves.

    Pour the finished sauce into a gravy boat with a spout.

    Serve honey mustard sauce with meat, poultry, and fish, as well as with various fresh-vegetable salads. Store honey mustard sauce in an airtight jar in the fridge for no more than a week. Enjoy!

  • This is one of the most common and frequently used sauces. Any mustard works: Russian, Dijon, or whole-grain French. It all comes down to what you prefer most. I used Russian. Keep in mind that swapping the mustard changes the flavor: with Russian mustard the sauce comes out slightly spicy, while with French it's even sweeter. The honey affects the flavor too. I use ordinary flower honey just as it begins to crystallize. With chestnut or buckwheat honey, the sauce is more robust in taste and color. Some recipes add pressed garlic, soy sauce in place of salt, or a raw yolk. There are many ways to make this dressing - I'm giving the basic version, which you can adjust to your own taste.
