Cranberry Mousse with Semolina
Treat yourself and your friends to this wholesome sweet-and-tart dessert! What makes it so appealing is how easy the ingredients are to find — they're inexpensive — and it doesn't take long to make. This is a simple, tasty dessert. It's also good for kids, since the berry juice is never cooked, which means it keeps all its vitamins. This recipe has been passed down through the generations in our family. When my brother and I were little, our mom made this dessert for us. And when I made the mousse recently and told her about it, she laughed and said it had been made for her as a child, too. The dessert is simple, no frills, but if you plate it nicely, a good mood is guaranteed.
Cooking method

Step 1:
For the dessert you'll need cranberries (fresh or frozen) — the main thing is that they're ripe, dark red or deep crimson.

Pour a cup of cranberries into a deep bowl.

And mash them with a fork or a potato masher.

After that, pour in 1/3 cup of hot water, stir, and strain it through a sieve.

Set the juice you've collected aside for now.

Transfer the pulp to a saucepan, pour in 3 cups of water, and boil for a couple of minutes.

Strain the resulting compote again.

Use it as the base for cooking semolina porridge with 3 tablespoons of semolina. Cook for about 8 minutes until thickened, then stir in 3/4 cup of sugar, stir until dissolved, and take it off the heat.

Once the porridge has cooled a bit, pour in the juice you squeezed out at the start. Stir.

Step 10:
Now pour the porridge into a blender and whip it for about 10 minutes. In that time the mixture will whip up and turn fluffy.

Spoon the mousse into dessert glasses and decorate them however your imagination takes you. :) Enjoy!
- P.S.: If you'd like a more intense flavor, you can cook the "compote" with just 2 cups of water.
