Classic Baked Friendship Porridge
An oven-baked milk porridge of rice and millet with egg. It's wonderfully tasty and works well for breakfast or supper — and it's a great one for kids, too. This porridge is best made with short-grain (round) rice. "Friendship porridge" (kasha Druzhba) is a classic that cooks two grains together in one dish.

Step 1:
How do you make classic baked Friendship porridge? You'll need two grains in equal amounts — millet and rice — plus an egg, milk, sugar, salt, and butter. Measure everything out from the list.

Pour the rice and millet into a saucepan.

Rinse the grains in the pan two or three times with cold water.

Add water to the grains, using about 2 cups (500 ml) of water per cup of grain. Cook the rice and millet over low heat for 10 minutes.

After 10 minutes, once the liquid has cooked off, pour in 1 cup of milk and cook, stirring, for another 7 minutes or so.

Stir the butter into the porridge, then remove the pan from the heat.

Whisk the egg with the sugar, salt, and a pinch of vanilla until just combined.

Add the remaining cup of milk to the egg mixture and stir well.

Prepare a baking dish — a glass casserole, as in this recipe, or a clay pot works well. Grease the sides and bottom with butter.

Pour the egg-and-milk mixture into the pan with the porridge and stir well.

Pour the prepared porridge into the baking dish.

Place the dish of millet-and-rice porridge in the oven at 350°F (180°C), uncovered, for 40 minutes.

After 40 minutes, the delicious oven-baked Friendship porridge is ready.

Serve the Friendship porridge hot, straight from the oven.
- For rice dishes that always turn out great, choose the right variety and rinse it well before cooking.
- For tasty millet porridge, rinse the millet thoroughly and, if it tastes at all bitter, scald it with boiling water before cooking.
