Bream Fish Soup (Ukha)
This homemade soup will whisk you straight to the riverbank! Tasty and budget-friendly. (Ukha is a traditional clear Russian fish soup.)

Step 1:
The ingredients you'll need to make the soup.

Peel the potatoes, cut them into small cubes, cover with water, and set over the heat.

Grate the carrot on a fine grater and finely chop the onion. Add the vegetables, bay leaf, and peppercorns to the soup.

Step 4:
Rinse the millet and, once the soup comes to a boil, add it. Season with salt.

Step 5:
Cut the lard (fatback) into small pieces and add it to the soup.

Step 6:
Once the soup is nearly done, add the bream head. First, rinse the fish well and remove the gills and eyes. Bring the soup back to a boil.

Step 7:
Remove the soup from the heat, let it rest for 5 minutes, and serve — lift the fish out before serving. Enjoy!
