Squid in Garlic Sauce

    1. Rinse and clean the squid.
    1. Make the brine: add the peppercorns, salt, dried fish seasoning, and a couple of bay leaves to boiling water, and boil for a couple of minutes.
    1. Cook the squid in the brine for about 10 to 15 seconds from the moment it returns to a boil, then take it out and cut it into strips.
    1. Rinse the parsley and chop it with a knife. Peel the garlic and put it through a press. Combine the garlic with the parsley, pour in the vinegar, add the salt and sugar, season with ground black pepper and olive oil, and mix.
    1. Toss the warm squid with the garlic sauce and let it sit for 20 minutes.
