Prepare the ingredients for dumplings from cottage cheese. To get a more delicious and healthy dish, it is better, of course, to use natural homemade cottage cheese, but the one that is at hand will do, except for the curd paste-like product. Cottage cheese is ground with a blender or twisted through a meat grinder until smooth.
We drive an egg into a bowl with cottage cheese, add salt and sugar. Mix well or grind with a blender so that the mass is homogeneous and the sugar is dissolved. We pour the sifted flour into the curd mass in parts and constantly mix the dough preparation with a spoon so as not to overdo it with flour. Because it may take a little more or a little less depending on its quality. Flour from different manufacturers for the preparation of the same size of the product may require different amounts, so you need to focus on the consistency of the dough. The dough should result in a dense, but soft. We form a sausage from the dough, cut it into small pieces of the same size. You can leave them as they are, or make them round or square as desired.
In a saucepan, bring salted water to a boil. In parts, we throw dumplings into the water, stirring with a wooden spoon so that they do not stick to the bottom of the pan. Cook dumplings until they pop up. After the dumplings have surfaced, cook them for about 5 minutes. We catch them out of the water with a slotted spoon so that the excess liquid is glass. Spread the dumplings on a plate, put a piece of butter on top or pour melted, preferably natural butter, it is more fragrant, salt a little and sprinkle with finely chopped green onions. Or we serve dumplings with sour cream, jam or condensed milk if desired.
