Cottage Cheese Dumplings (Halushky)

  • Gather the ingredients for the cottage cheese dumplings. For the best flavor and nutrition it's ideal to use natural homemade cottage cheese, but whatever you have on hand will do — just not a soft, spreadable curd product. Press the cottage cheese through a blender or a meat grinder until smooth. Crack the egg into the bowl with the cheese and add the salt and sugar. Mix well (or blend) until the mixture is smooth and the sugar has dissolved. Add the sifted flour a little at a time, stirring constantly with a spoon so you don't add too much — you may need slightly more or less depending on the flour. Different brands behave differently, so go by the consistency of the dough rather than an exact amount: it should end up firm but soft. Roll the dough into a log and cut it into small, even pieces. Leave them as they are, or shape them into rounds or squares if you like. Bring a pot of salted water to a boil. Drop the dumplings in a few at a time, stirring with a wooden spoon so they don't stick to the bottom. Cook until they float, then about 5 minutes more. Lift them out with a slotted spoon, letting the excess water drain off. Put the dumplings on a plate and top with a pat of butter, or drizzle with melted butter (natural butter is best — it's more fragrant), add a little salt, and sprinkle with finely chopped green onions. Or serve them with sour cream, jam, or condensed milk, as you like. Enjoy!
