Shrimp, Squid, and Crab Stick Salad

Step 1:
How do you make a salad with shrimp, squid, and crab sticks? Gather your ingredients. Take the squid, shrimp, and crab sticks out of the freezer ahead of time so they have a chance to thaw. Wash the cucumbers, pat them dry, and trim the ends. Be sure to taste a cucumber — a bitter one can ruin the salad. Cut the cucumbers into small cubes and put them in a salad bowl.

Step 2:
Scald the thawed squid with boiling water and peel off the skin. Clean out the innards and the quill (the stiff transparent "pen"), then rinse the squid under running water. Drop the bodies into boiling salted water and cook for no more than three minutes (any longer and the squid turns rubbery). Take them out, let them cool, and cut them into thin strips. Add them to the bowl with the cucumbers.

Step 3:
Take the thawed crab sticks out of the package and peel off the wrapping film. The film around each crab stick can be hard to remove; to make it easier, hold the sticks over steam for 1–3 seconds. Cut the crab sticks into small cubes and add them to the salad bowl with the other ingredients.

Boil the eggs. To keep them from cracking, start them in cold water over low heat. Boil for 9 minutes once the water comes to a boil, then transfer them to cold water to cool — the sudden temperature change makes them easier to peel. Peel them and cut them into cubes. Add the chopped eggs to the bowl.

Shrimp usually come already cooked, so you just need to thaw and peel them. But, like the squid, they taste better if you drop them into boiling water for a couple of minutes. Then peel the shrimp, removing the shells, tails, and veins. Add them to the salad. Mix in the mayonnaise (or a blend of sour cream and mayo) and salt — go easy, since mayonnaise is already salty.

For a little bite, you can add finely chopped onion if you like. Serve the salad right away, or chill it in the fridge first. Enjoy!
- With squid, crab sticks, and shrimp, you could safely call this a seafood medley. To round it out, garnish the salad with a spoonful of red caviar. It's important to buy good-quality ingredients, paying close attention to the look of the frozen items.
