Cheese-Stuffed Crab Sticks

A great appetizer for any party table! These cheese-stuffed crab sticks are incredibly delicate in flavor. The recipe uses spreadable processed cheese — pop it in the freezer for a few minutes before you start so it's easier to grate. As for the mayonnaise, homemade beats store-bought. Use just enough to make the filling spreadable, so it isn't dry. If you like, thin the mayo with sour cream in a 1:1 ratio — it'll be a bit lighter but still delicious.

    1. Put the eggs in a saucepan and cover them completely with water. Set over the heat and hard-boil them — 7 minutes from the moment the water comes to a boil. 2. Transfer the eggs to a bowl of cold water and let them cool a bit, then peel off the shells. 3. Unwrap the processed cheese and grate it on a fine grater along with the eggs. Put it in a deep bowl. 4. Peel the garlic and grate the cloves on a fine grater, or push them through a press — the goal is a smooth garlic paste. 5. Rinse the dill under running water and pat it dry, then chop it finely with a sharp knife. Add it to the bowl with the garlic, cheese, and eggs. 6. Season with salt and ground black pepper to taste, and add the mayonnaise. Mix well. The filling should be neither too dry nor too wet — aim for a creamy consistency that spreads easily. 7. Unwrap the crab sticks and drop them into a bowl of hot water for 1–2 minutes. This keeps them from tearing as you unroll them. 8. Lift the crab sticks out of the water and pat them dry with paper towels, then carefully unroll them. 9. Spread the cheese-and-egg filling over each unrolled stick and roll it back up tightly. Fill all the sticks this way. 10. Refrigerate the appetizer for half an hour, then cut the rolls into pieces and arrange them nicely on a platter. Enjoy!
