Salad with Salted Salmon, Cucumber, and Tomato

A light, fresh, vitamin-packed salad for anyone watching their waistline! I'm head over heels for this one — light, airy, colorful, and absolutely delicious, all for hardly any calories. And it comes together in just 10–15 minutes! Too good to be true? Nope — totally doable!

    Prep your ingredients: hard-boil the eggs, and rinse and dry the vegetables.

    Dice the salmon.

    Then finely chop the eggs.

    Dice the cucumber.

    Dice the tomato.

    Tear or coarsely chop the napa cabbage, using only the green leafy part.

    Add the vegetable oil and a small squeeze of lemon juice — just a touch. I left mine unsalted, but feel free to add a pinch of salt. Toss to combine!

  • Not counting the prep, it took just 10 minutes to put together! Not bad at all for treating yourself and your loved ones to such a fantastic little salad. It's really tasty — give it a try!
