  • How do you make Forest Glade salad with pickled honey mushrooms?
    1. Boil the chicken breast, egg, carrot, and potatoes (potatoes in their skins). Cool the cooked ingredients and peel the ones that need it.
    1. Now build the salad in layers, lightly salting each one:
    • Dice the potatoes small and spread on a thin layer of mayonnaise.
    • Dice the pickles and layer them over the potatoes.
    • Peel the onion, chop it as finely as you can, and scatter it over the pickles.
    • Dice the carrot too (save a little for garnish), spread it in an even layer, and brush with mayonnaise.
    • Cut the chicken into rough pieces and layer it over the carrot.
    • Spread mayonnaise over the chicken layer and grate the egg on top.
    • Wash the dill, pat it dry with paper towels, chop it finely, and arrange it around the salad to form a grassy "glade."
    • For the finishing touch, arrange the honey mushrooms prettily over the top and decorate with the reserved carrot.
  • Cover the salad with plastic wrap and chill it for an hour, then it's ready to serve.
  • Happy celebrating!
  • Homemade mayonnaise is the way to go — it tastes better and is better for you. Check out our homemade mayonnaise recipes. You can also use sour cream or plain yogurt instead of (or mixed with) mayonnaise in any ratio you like, which lightens the dish up.
  • How do you hard-boil eggs so they don't crack? Start them in cold water over low heat. Boil for 9 minutes once the water comes to a boil, then transfer to cold water to cool — the sudden temperature change makes them easier to peel.
