Step 1:
Here is the main ingredient for hash - beef legs, or rather in my case - it's knee joints. Beef tails and tripe are also taken for hash, namely tripe, but if you decide on this ingredient, then it will need to be pre-soaked and boiled separately, and only then added to a common pan.
Step 2:
Legs need to be cut so that they fit into a saucepan, wash well and soak for 6-8 hours, changing the water several times. I soaked it overnight
Step 3:
Before you put the hash to cook, I wash it well again and change the water for the last time
Step 4:
Bring to a boil and remove the foam, and then reduce the heat to the lowest and almost forget about it for 8 hours. I only occasionally removed the foam and made sure that the broth did not boil too much
Step 5:
After 8 hours we have such a fragrant rich broth. According to the classics, neither salt nor other spices are added to the pot with hash
Step 6:
Carefully, so as not to get burned, remove the bones from the broth
Step 7:
We separate the meat from the bone

Be sure to filter the broth through a sieve to get rid of small fragments of bones
Step 9:
Squeeze the garlic head into a separate bowl
Step 10:
Pour 1-2 ladles of hot broth and add 1-2 tablespoons of vinegar, salt - this will be a dressing for hash

Radish, grated or sliced, is traditionally served with hash

I fill the radish with vegetable oil and prisalivayut

Also, there should be sliced pickled cheese on the table with hash

Thin Armenian lavash is cut into small squares and dried

We put pieces of meat in a plate, pour very hot broth, salt, add garlic dressing and eat together with pita bread or put it directly into the plate and let it soak a little

Now hash is prepared for the 2-3 day of the wedding, after long New Year holidays - it completely restores the body after such a long feast. This is a whole unique ritual, to which only men are allowed, and women can only enjoy the result. This soup is served for breakfast as a separate dish. Hash has miraculous properties for joints, which makes it simply irreplaceable!
