Step 1:
Prepare the ingredients. To prepare a diet soup from zucchini, we will need: drinking water or pre-cooked vegetable broth (from onions and carrots with celery), zucchini, potatoes, herbs, onion, garlic, olive oil, ground black pepper and salt.
Step 2:
Wash the zucchini, cut a few slices from the vegetable. They will be needed to decorate the finished dish.
Step 3:
Cut the rest of the zucchini into semicircles.
Step 4:
Peel the onion and cut into half rings.
Step 5:
Peel and chop the garlic.
Step 6:
Heat vegetable oil in a saucepan. Stir-fry the onion and garlic for about 3 minutes.
Step 7:
Wash, peel and dice the potatoes.
Step 8:
Add the zucchini cut into semicircles to the onion in a saucepan. Fry together, stirring occasionally, for about 5 minutes.
Step 9:
Add potatoes, mix. Fry for another 2 minutes.
Step 10:
Pour hot vegetable broth or water into the vegetables. Add salt and pepper. Mix it up.
Step 11:
Cook the soup under the lid on low heat for about 15 minutes until the vegetables are soft.
Step 12:
Add salt to the postponed circles of zucchini and fry in a frying pan in vegetable oil until a light golden crust appears. If desired, you can sprinkle zucchini with ground herbs and salt.
Step 13:
With an immersion blender, chop the vegetables into puree.
Step 14:
Pour hot soup on plates. Put 2-3 cups of zucchini in each plate. Enjoy your meal!
