"Inspiration" Layered Salad with Chicken
A salad as beautiful as it is delicious — it'll inspire your next kitchen adventure! The "Inspiration" salad is exactly the showstopper every host hopes to find for the holiday table, and it surprises guests with its flavor just as much as its looks. With chicken and mushrooms it's quite filling, while the vegetables keep it juicy. Shape it round or rectangular like a cake — your call. Inspire yourself and your guests with a gorgeous salad!

Step 1:
The ingredients. Boil and cool the chicken breast, beets, carrots, and eggs ahead of time. I salt the cooking water, so I don't season the layers as I build them.

From one beet, thinly slice a few rounds for the rose. Grate the rest on the coarse side of a box grater.

Cut a few thin strips off the carrots for garnish, and grate the rest coarsely.

Layer 1 — grated beets and a lattice of mayonnaise.

Layer 2 — grated carrots and a lattice of mayonnaise.

Layer 3 — finely chopped onion and a lattice of mayonnaise.

Layer 4 — finely chopped chicken and a lattice of mayonnaise. To get neat edges, I set a board against the side and lay the chicken around the rim first, then fill in the middle.

Layer 5 — grated egg yolks and a lattice of mayonnaise.

Layer 6 — chopped pickled mushrooms and a lattice of mayonnaise.

Layer 7 — grated cheese and mayonnaise.

Layer 8 — grated egg whites.

Your choice — leave the sides showing their colorful layers, or cover them up. To coat the sides with a thin layer of mayonnaise, use a spatula or knife, then press the remaining egg white onto the edges.

Decorate the salad. Place a beet rose in the center: first shape a bud from the small beet scraps, then form the petals from the thin beet rounds.

Then arrange the carrot strips.

And add leaves around the rose with sprigs of parsley. Let the salad rest for 1 hour to set and soak up the flavors. Enjoy!
