Chicken, Beet, and Walnut Salad

Cooking method

    How do you make a chicken, beet, and walnut salad? It's easy enough. First, gather all the ingredients on the list. You can use beets that are boiled or roasted in foil until tender. Stores also sell ready-cooked beets in vacuum packaging, which saves cooking time.

    Wash the chicken breast and boil it in salted water until cooked, about 20 minutes. Cool it and cut into small cubes. Instead of boiling, you can pan-fry the breast or roast it in foil — and you can use smoked chicken in place of fresh.

    Cool the cooked beets, peel them, and cut into small cubes.

    Rinse the walnuts and toast them in a dry skillet.

    Then finely chop the nuts with a knife.

    Peel the garlic and mince it finely, or press it. Use more or less garlic to taste.

    In a bowl, combine the chicken, beets, walnuts, and garlic.

    Dress the salad with mayonnaise and toss to combine.

    Set a plating ring (5.5–6 inches / 14–16 cm across) on a plate, spoon in the salad, and press it down. Chill it in the refrigerator for 1 hour. If you don't feel like using a ring, just toss everything in a bowl and serve.

    Lift off the ring before serving and garnish the salad with fresh herbs. Enjoy!

  • The salad looks neatest if you cut all the ingredients into pieces of the same size and shape (cubes, for example).
  • It's even better to make the mayonnaise yourself — tastier and healthier. See here for some good homemade mayonnaise recipes. You can also use sour cream or plain yogurt instead of mayonnaise, on their own or mixed with mayo in any ratio you like, to lighten up the dish.
  • You can even dress the salad with plain vegetable oil if you prefer.
