  • Whether you're expecting guests or just making dinner, this chicken-and-pineapple salad is a great addition to a holiday table. And don't let the chicken-and-pineapple pairing throw you — it isn't overly sweet. It's a tasty, wholesome dish. Go easy on the mayonnaise, since the salad is juicy on its own; in fact, if you're making it for a party rather than a regular dinner, just dab a little mayonnaise between the layers — whoever's hungry will mix it in once they get to the plate. By the way, a standard can of pineapple is a lot for one salad — very sweet, and you won't need the juice at all. So start by drinking the juice from the can and eating a couple of pineapple rings, and then get on with the salad. Though "get on with" is a stretch — all you really do is dice everything, mix it together, and the salad's done. By "everything" I mean the chicken breast, pineapple, and bread. The cheese, incidentally, can be diced the same way instead of grated. And the parsley? You don't even need to chop it — a sprig makes a nice garnish, though you can add chopped parsley too. So a can of pineapple, a whole chicken breast, and some bread turn this into party food, not dinner for a few — the salad always disappears long before the meal is over. Now: fry the cut-up chicken breast in vegetable oil until cooked. Dice the bread, and fry those cubes in oil too, until golden. And here come our pineapples — cut them into small pieces. Ideally all the components should be the same size. The recipe calls for grating the cheese finely, but I like it diced. Now combine everything — chicken with pineapple, cheese with croutons (I'd add the croutons right before serving so they stay crisp). Dress it all with mayonnaise and — enjoy!
