Matryoshka Salad with Korean-Style Carrots

  • Korean-style carrots (morkovcha) are a spicy julienned carrot salad you can find ready-made; here's how to put the whole salad together. 1. Boil the chicken breasts until cooked through and let them cool completely. 2. Hard-boil the eggs and let them cool, too. 3. Peel the onion and cut it into small dice. 4. Heat a skillet with the vegetable oil and fry the onion until golden. Let it cool completely. 5. Cut the chicken into small cubes (about 1/2 inch). Dice the pickles as well. 6. Grate the eggs on a coarse grater, setting one yolk aside. 7. Grate the smoked cheese on a coarse grater, setting aside one round slice. 8. Take a flat rectangular or oval platter. You'll build the salad in the outline of a matryoshka doll, layer by layer, spreading mayonnaise over each layer. 9. For the first layer, spread the Korean-style carrots (about three-quarters of the total), then the chicken, then the fried onion (no mayonnaise on this one), then the pickles, then the corn, then the eggs, and finish with the smoked cheese. 10. Into separate bowls, coarsely grate the fresh cucumber and finely grate the reserved yolk. Cut the tomatoes into cubes. 11. Decorate the salad: use the round of smoked cheese for the face, allspice berries for the eyes, and a piece of tomato for the lips; make the other features with, say, dill sprigs; use chopped tomato for the headscarf, grated cucumber for the dress, and the remaining Korean-style carrots for the apron. Sprinkle the sides of the salad with chopped dill. The salad is done! Chill it and serve. Enjoy!
