No-Bake Cold Cheesecake

A superb cold dessert — the centerpiece of any holiday table! This no-bake cold cheesecake combines familiar, favorite ingredients in an ice-cream-like form that will please grown-ups and kids alike. After all, who doesn't love ice cream? Like any cold treat, though, it should be eaten in moderation. And of course this dessert shines brightest on hot summer days.

  • In a mixing bowl, crush the chocolate cookies. Add the sugar and butter and mix until smooth. Press a layer of the mixture into the bottom of a springform pan, forming a 1.5–2 cm rim. Set aside some of the "crust" for decoration. In another bowl, combine the cream cheese, chocolate syrup, and condensed milk. Set it aside. Whip the cream to stiff peaks, add the cheese-and-chocolate mixture, and mix until smooth. Spoon the creamy filling onto the prepared base. Decorate the top. Cover and put it in the freezer for at least 6 hours. Take it out of the freezer 30 minutes before serving. Enjoy!
