Avocado and Crab Stick Salad

A striking presentation in avocado halves that will surprise your guests. I recently came to love avocado, and now I often make all sorts of salads with it. What a great fruit — it pairs well with fried bacon, with vegetables, and with crab sticks. Here's another recipe that turned out a winner.

    Cut the crab sticks into small cubes.

    Wash and dry the cucumber and also cut it into small cubes.

    Cut the avocado in half lengthwise. Remove the pit.

    Carefully scoop out the flesh with a spoon, trying not to damage the shells.

    Sprinkle the inside of the avocado shells with lemon juice so they don't brown. Sprinkle the flesh with lemon juice too.

    Cut the avocado flesh into small cubes.

    In a bowl, combine the crab sticks, avocado, and cucumber. Season with pepper and dress with mayonnaise.
