Frozen Plum Jam for Winter

    1. Squeeze fresh juice from the oranges and lemons. Rinse a small piece of ginger, pat it dry with a paper towel, and peel it, then grate it on the coarse side of a grater. 2. Now for the plums themselves, which should already be pitted. Since this recipe uses frozen plums, you can take them out of the freezer to thaw and then drain off the liquid they release. To save time, you can also drop the still-frozen plums straight into the pot and start cooking right away. The texture of the finished jam will differ a bit between the two methods, since the frozen berries hold more liquid — and if you go the frozen route, you'll need to cook the jam a bit longer. 3. Set the pot of plums over the heat and bring to a boil. Add the sugar and grated ginger, pour in the orange and lemon juice, and stir everything together thoroughly. Cover and simmer the plums over low heat for an hour, stirring now and then so the fruit doesn't scorch on the bottom. Stir gently so you don't break up the whole pieces of fruit. 4. Get your jars ready: wash them well in hot water and sterilize them over steam or in the microwave. Boil the lids in a saucepan for 5 minutes. 5. Ladle the plum jam into the sterilized jars and seal with the clean lids. Set the hot jars upside down on a flat surface (a table or the floor) and wrap them in a blanket. Leave them until completely cool, then move them to a dark place where they'll keep for up to a year. Happy canning!
