- First, gather your plums. Rinse them well under running water and cut away any bruised or rotten spots. Cut the plums in half and remove all the pits. Put the halves in a food processor or blender and pulse on low speed until you have a smooth purée. Transfer the purée to a heavy-bottomed pot. Add the sugar and set the pot over the heat. Keep in mind that the more sugar you add, the thicker the jam will ultimately be — with the ratio of sugar to fruit in this recipe, you end up with a thick, rich jam. Set the pot of plums and sugar over moderate heat and bring it to a boil, then lower the heat to a simmer and cook the jam, covered, for about 20 minutes. Be sure to stir it now and then so the fruit and sugar don't scorch on the bottom. A wooden spoon or spatula is best here, since metal can react with the fruit acid as it heats and throw off the flavor. Get your jars and lids ready: wash them with baking soda and either scald them with boiling water or hold them over steam. As it cooks, the jam will reduce by about half. Stir in the ground cinnamon and mix well. Take the pot off the heat, pour the finished jam into the sterilized jars, and seal. Your easy pitted plum jam is ready. Happy canning!
