Cooking method
First of all it is necessary to collect plums. Rinse them thoroughly under running water and cut off all damaged and rotten areas, if any. Next, cut the fruit into halves and remove all the bones.
Put the fruit halves into the bowl of a food processor or blender and grind the plums to a puree state at low speed.
Put the resulting fruit puree into a saucepan with a thick bottom. Add the required amount of sugar and put the pan on fire. It is important to know that the more sugar put into the jam, the thicker the consistency it will eventually turn out. With such a ratio of sugar and fruit fruits, as in this recipe, the output is a thick, rich jam of the jam type.
Put a saucepan with plums and granulated sugar on the fire and bring the contents of the dishes to a boil over moderate heat. Then reduce the heat to a minimum and cook the fruit jam for about 20 minutes, covering the pan with a lid. An important point is to stir the jam periodically with a spoon so that its fruit part and sugar pieces do not burn to the bottom of the pan. For these purposes, it is better to choose a wooden spoon or a spatula, since metal, when heated, can react with fruit acid and negatively affect the taste of the final product.
Prepare jars and lids for jam rolling. Rinse them with baking soda, scald them with boiling water or hold them over steam.
Eventually, during the cooking process, the volume of jam will decrease by about half. Pour ground cinnamon into a saucepan and mix well. Then remove the pan from the heat, pour the finished jam into sterilized jars and roll up.
