- This sauce is a great match for rice dishes, stir-fried vegetables, and meat and fish appetizers. It's easy to make, and its wonderful spicy flavor wins everyone over.
- The finished sauce is moderately spicy with a sweet, fragrant note. By adjusting the amounts of the various ingredients — the chili sauce in particular — you can make it more or less spicy. Take a small saucepan and add 50 ml (about 3½ tbsp) of room-temperature water, the rice vinegar, and the sugar. Stir well until the sugar fully dissolves. Set the pan over medium heat and bring to a boil. Meanwhile, peel, rinse, and finely chop the garlic. Drop the chopped garlic into the boiling liquid. Add the red pepper and boil for another couple of minutes, during which everything will meld together. Take the pan off the heat and stir in the chili sauce. In a separate small bowl, mix the cornstarch with 20 ml (about 4 tsp) of cold water, stirring thoroughly until the starch dissolves and there are no lumps. Return the pan to the heat, bring to a boil, and slowly stir in the cornstarch slurry. Mix well again and salt the sauce. Keep cooking over medium heat, stirring constantly, for about 5 more minutes. The sauce will gradually thicken; once it reaches a thick consistency, take it off the heat and let it cool. Poured into a clean glass container, the finished sauce keeps in the fridge for 10–14 days — and it may get even spicier as it sits. Sweet-and-spicy Chinese sauce is best served with cooked meat, vegetable, fish, and rice dishes. It pairs especially well with egg rolls or a simple omelet. Enjoy!
