Step-by-step cooking
Step 1:
Fry chopped onion and garlic in olive oil.
Step 2:
Add chopped liver. Fry. Sprinkle with thyme. Fry until golden brown and pink in the middle. Set fire to the brandy in a separate container so that all the alcohol burns out. Add brandy to the liver. Fry for another 1 minute.
Step 3:
Put the liver in a blender. Grind.
Step 4:
Melt the butter. Strain the liquid through a sieve. Do not use white sediment. Add oil, salt and pepper to the liver. Mix it up. Rub the mass twice through a sieve.
Step 5:
Put the parfait in serving molds. Put it in the refrigerator for an hour.
