Mayo-Free Salad Dressing — Spinach Sauce
A versatile sauce for salads, fish, and meat dishes. I have a real soft spot for all kinds of sauces. I made this one for a salad of brined cheese and sun-dried tomatoes that I'd dreamed up the day before. I needed a mild sauce with a bright, herby flavor. A bunch of fresh spinach had been sitting in the fridge for a while, so I decided to use it for the sauce. This mayo-free salad dressing went really well with my salad, but its flavor also makes it perfect for meat and fish dishes, as well as a sauce for pasta.
Cooking method

Step 1:
Prepare the ingredients. Wash and dry the spinach. Cut any large nuts in half.

Peel and chop the garlic.

Put the spinach, nuts, garlic, and water into a blender.

Blend the mixture until smooth.

Pour the lemon juice into the resulting sauce and add the ground black pepper.
