  • To make this striking, very spicy emerald-green relish, you'll need green tomatoes — special varieties that stay green even after they ripen. It's best to choose a variety that tastes sweetish rather than sour. Use green peppers as well. Wash the tomatoes, remove the stems, cut them into large pieces, and chop them in a blender (or you can run them through a meat grinder). Season with salt. Peel and grate the horseradish on a coarse grater; finely chop the peeled garlic or grate it too. Add them to the tomatoes. Remove the stems and seeds from the washed peppers and chop them finely. If you want the relish to be as spicy as possible, you can leave the seeds in. Add the chopped peppers to the tomatoes and horseradish and mix thoroughly. Your green tomatoes with horseradish for the winter are ready! Spoon the mixture into sterilized jars, close them tightly with lids, and store in the refrigerator.
