Beef Broth with Baked Rice

- Broth. Cut the meat into large cubes. Wash and peel the vegetables, and slice the carrot into rounds. Put the meat, carrot, onion, and spices in a pot and pour in 1.5 liters (about 6 cups) of water. Cook for about 40 minutes, until the meat is tender. Strain the broth.
- Rice. Sort and rinse the rice, then add it to boiling salted water and cook until tender. Drain it in a sieve and let the water run off. Put the rice in a bowl, let it cool slightly, and stir in the raw egg. Grate the cheese and add it to the rice. Mix everything well.
- Line a small baking dish with parchment and grease it with butter. Pack the rice mixture into the dish and press it down firmly.
- Bake in an oven preheated to 350°F (180°C) for 15 minutes.
- Use a glass or cutter to cut rounds out of the baked rice.
- Ladle the broth into bowls.
- Add 1–2 rice rounds to each bowl and sprinkle with fresh herbs. I used thyme and parsley.
