    1. Wash the apples but leave the stems on. Pierce each apple all the way through with a wooden toothpick. 2. Make the syrup: pour the sugar into a saucepan, add the water, and set it over the heat. Once the sugar crystals have melted, add the citric acid. 3. Add the crab apples to the boiling syrup, bring back to a boil, and cook for 10 minutes. Take the pan off the heat. 4. Cover the apples with a flat plate slightly smaller than the pan and set a weight on top; leave for 10 hours. This setup is essential to keep the apples fully submerged in the syrup. 5. After that time, boil the apples again and once more weigh them down for 10 hours. 6. Then bring the jam to a boil one more time, spoon it into prepared sterilized jars, and seal with lids.
