- Wash the sloes thoroughly, remove the stems, and discard any soft or damaged fruit — this jam needs only firm, springy berries. 2. Put the prepared sloes in a bowl of hot water (about 175°F / 80°C) and let them sit for 10 minutes, then transfer them to cold water and pierce each berry with a large needle or a toothpick. 3. Combine the water and sugar in a suitable pot and warm over low heat until the sugar fully dissolves. Add the sloes to the smooth, boiling syrup, take the pot off the heat, and let it cool for 5 hours. 4. Then bring the syrup and berries back to a boil, skimming off the foam as it rises. Boil for 5 minutes, no longer. Fill clean, dry jars with the jam, let them stand for 15 minutes, and only then seal them airtight. Enjoy your jam — and have fun making it!
