Sevruga with Horseradish Sauce

Make fish for dinner — it's delicious and surprisingly easy! Sevruga with horseradish is a real treat. Poached fish under a creamy white sauce will win the whole family over. The sauce is thick and pairs beautifully with the delicate flavor of the sturgeon. Carrots and onion make the poaching broth richer and more flavorful.     1. Pour about 6 cups (1.5 L) of water into a pot, bring it to a boil. Peel the carrots and onion, drop them in whole, and add the bay leaves, peppercorns, and salt. After about 15 minutes, add the prepared sevruga, poach gently over low heat until cooked through, then take it off the heat and let the fish cool right in the broth. 2. Hard-boil the eggs, then cool, peel, and chop them as finely as you can. Toast the flour until lightly golden, stir in the butter, and pour in the broth, keeping it over low heat until it thickens slightly. Grate the horseradish, add it to the sauce along with the sour cream, and bring to a boil. Stir in the chopped eggs, then season with salt and pepper to taste. 3. Lift the cooled fish out, remove the bones, cut it into pieces, and arrange them on a serving platter without crowding. Pour the sauce over the fish. Wash and dry the dill, chop it finely, and scatter it over the top. Enjoy!
