Err on the side of a little more liquid rather than less, so the porridge turns out soft and creamy instead of dry and lumpy.

  • For delicious, hearty barley porridge, first rinse the barley grits any way that's convenient (place them in a fine-mesh strainer, or put them in a bowl, cover with plenty of water, and drain). Put the grits in a saucepan, pour in the milk, and add the salt, sugar, and butter or ghee. Bring to a boil, reduce the heat to low, and cook for 20 minutes. Once it's done, you can wrap the pot in a warm towel and let the porridge steam and finish softening.
