Beet Salad with Cream Cheese and Salmon

A salad that's as wholesome as it is delicious! This salad with cream cheese and salmon is incredibly easy to put together. You can boil the beets ahead of time or right before assembling — if they're already cooked, the whole thing takes no more than half an hour. Finish it with grated parmesan if you like, though the salad is wonderful without it, too.

    1. Peel the boiled beets, slice them into thin rounds, and arrange them on a flat plate.
    1. Slice the salmon very thinly and lay it over the beets.
    1. Using two spoons, shape the cream cheese into neat quenelles and place them on top.
    1. Scatter the capers over the salad, season lightly with pepper, and drizzle with olive oil.
  • Garnish with basil just before serving.
