Oven-Baked Vendace with Potatoes

A tasty, wholesome fish baked right along with its side dish! This is a wonderful, simple recipe for when you need to get dinner on the table fast. You can skip pre-boiling the potatoes, but I think the dish tastes better when you do.

    1. Wash and peel the potatoes, then put them on to cook. Boil until half done, drain, and once they have cooled, slice into rounds. 2. While the potatoes cook, prep the vendace (a small freshwater whitefish): scale the fish, slit the belly, and remove the insides. 3. Peel the onions and slice into rings. 4. Grease a baking dish with vegetable oil, lay in the vendace, and season with salt and pepper. Add a layer of onion, then the potatoes, seasoning them with salt and pepper as well. 5. Cover the dish with foil and bake in a preheated oven for half an hour. Near the end, remove the foil and let the potatoes brown. The oven-baked vendace with potatoes is ready!
