Adjika with Apples, Carrots, and Sweet Peppers

This aromatic sauce brings out the flavor of meat dishes in a whole new way! Adjika made with apples and peppers comes out moderately spicy, with a pleasant tang and a heady aroma. For the best results, choose a tart variety of apple and red bell peppers. Serve adjika alongside any meat dish—it's wonderful!

    1. Wash the tomatoes, score a shallow cross in the skin of each, dunk them in boiling water, then in cold water. After that, the skins slip off easily.
    1. Core the bell peppers, removing the seeds and ribs, trim off the stems, and rinse. Peel the garlic.
    1. Peel the carrots and apples, and cut the cores and seeds out of the apples.
    1. Halve the hot pepper lengthwise and scrape out the seeds (you can leave them in for extra heat—it's up to you).
    1. Cut all the prepared ingredients into small pieces, transfer to a pot, set over the heat, and cook covered for 30 minutes, stirring occasionally.
    1. Take the pot off the heat, stir the sugar, salt, and spice blend into the adjika, and let it cool.
    1. Press the vegetables through a coarse sieve, stir in the vegetable oil, and add the finely chopped basil; mix well.
