Classic Chocolate Salami from Cookies and Cocoa with Condensed Milk

A classic Soviet-era no-bake cookie dessert! Back then store shelves weren't exactly overflowing, so all sorts of treats were made at home from simple, affordable ingredients. Chocolate salami with cocoa and condensed milk is one of them. It got its name from its resemblance to an ordinary salami.

    How do you make classic chocolate salami from cookies and cocoa with condensed milk? Prepare the ingredients. Crumbly cookies work best, like plain tea biscuits. Choose condensed milk made from whole milk, with no vegetable fats. These days they sell small cans, so look for about 200 grams. Take the butter out of the fridge ahead of time so it softens.

    Right away, set aside a couple of cookies - they'll play the role of "fat" in the salami. Crumble the cookies by hand, leaving some large pieces.

    Grind the rest of the cookies to a fine crumb. There are several ways to do it - it used to be done with a meat grinder or rolling pin; now a blender or food chopper often does the job.

    Pour the cookies into a bowl. Add the softened butter and mix the cookies with it. It won't fully blend in - that's fine; just stir a little so it doesn't stay in a clump.

    Pour the condensed milk into the mixture and add the cocoa powder.

    Stir the mixture with a spoon until smooth - no mixer or other gadget needed; a spoon mixes it perfectly. At the very end, add the large cookie pieces you set aside.

    Mix them into the main mixture, which should be soft and pliable. If it comes out dry, add a couple of spoonfuls of milk.

    Turn the mixture out onto plastic wrap and shape it into a salami. Wrap it in the film and roll it on the counter, then tie off the ends of the wrap.

    Put the salami in the fridge for a couple of hours. The butter firms up and the salami becomes solid.

  • This really is everyone's favorite childhood salami recipe! We just made it without cocoa - the salami came out lighter and creamier. I liked the cocoa version more.
  • You can add chopped nuts, shelled seeds, or chopped dried fruit to this salami.
