Cod Roe Pie
A savory yeast pie with a tender, fragrant filling and a crisp golden crust. It's a little out of the ordinary, but it turns out genuinely delicious and hearty — a cod roe pie that's just as good for an everyday dinner as it is when company comes over.

- Dissolve the yeast in the warm milk and let it stand for 15 minutes. Stir in the salt and sugar until the granules dissolve. Sift in the flour, mix, then pour in the vegetable oil. Turn the dough out onto a floured surface and knead until smooth — it should become elastic and stop sticking to your hands. Cover the bowl and let the dough rise, punching it down 2–3 times as it doubles. 2. While the dough rises, make the filling. Boil the rice in salted water until just half-cooked. Peel and finely chop the onion, then sauté it in a skillet with a little vegetable oil. Rinse, dry, and finely chop the dill. 3. Divide the dough in half. Roll out one piece and lay it on a baking sheet greased with vegetable oil. Spread half of the cooked rice over the dough in an even layer, then top with the sautéed onion and the cod roe. Sprinkle with the chopped dill and add a second layer of rice. Roll out the other piece of dough, lay it over the top, and pinch the edges well to seal. 4. Beat the egg yolk with the milk and brush it over the pie for a glossy golden crust. Let the pie rise, then bake in a preheated oven at 350°F (180°C) for 35–40 minutes.
