Plum and Apple Adjika
A sweet-and-sour, intensely aromatic relish that brightens up just about any dish! Use tart plums and the most fragrant apples you can find. Add spices to taste — khmeli-suneli (a Georgian spice blend) and dried coriander work beautifully here. Toss in whatever fresh herbs you like; I go with cilantro. It's a true all-purpose condiment for almost any meal.

- Wash the plums well, cut them in half, and remove the pits. The recipe lists the net weight of the pitted plums. Core the apples and cut them up, discarding the seeds. 2. Wash the tomatoes, score an X in the bottom of each, and drop them into boiling water for one minute, then transfer to a bowl of cold water — the skins will slip right off. 3. Rinse the peppers and remove the stems and seeds. 4. Peel the garlic cloves. 5. Cut everything into rough chunks so it's easy to run through a meat grinder. Transfer to a pot and cook for 50–60 minutes. Once the mixture has thickened slightly, add the pressed garlic, salt, sugar, and spices. Cook for another half hour. 6. Ladle the boiling-hot adjika into sterilized jars, turn them upside down, wrap them in a warm blanket, and leave until completely cool. Then move them to a cool place for storage.
