Italian Shrimp Tagliatelle in Cream Sauce

- Cook the tagliatelle according to the package directions, drain it in a colander, and let it dry.
- Put the butter in a deep skillet, add the olive oil, and set it over the heat. While the fats warm up, peel the garlic, cut each clove in half, and add it to the hot oil. Fry the garlic until deep brown to draw out all its flavor, then remove and discard the cloves.
- Add the finely chopped shallots to the garlic-infused oil and cook for 2–3 minutes until soft, then sprinkle in the flour, pour in the cider, and stir.
- Pour the cream into the mixture, add the salt and thyme, and simmer until thickened (2 to 3 minutes), stirring occasionally.
- Add the shrimp to the sauce and cook until they turn pink, about 3 minutes.
- Take the sauce off the heat, stir in the chopped parsley, and add a squeeze of lemon juice. Taste and add more salt if needed.
- Toss the cream sauce with the tagliatelle and serve right away.
