    1. Rinse the peas, put them in a bowl, and cover with cold water. Leave to soak for 2 hours.
    1. Rinse the peas again, transfer them to a saucepan, pour in the water, set over low heat, and cook for one hour.
    1. Season with salt and blend smooth with an immersion blender (a countertop blender works too).
  • Serve hot, sprinkled with fresh herbs. Enjoy!
