Pea and Potato Mash
This wonderful side dish couldn't be easier to make! Two favorites — mashed potatoes and pea puree — come together in one recipe. The mash turns out amazingly delicious, especially when I make it in my grandmother's old skillet. You can serve it with just about anything: any kind of meat or braised vegetables. Top it off with croutons or potato chips and bring it to the table!

- Put the rinsed peas in a saucepan (preferably a heavy-bottomed one) and cover with water. They'll cook for 1 to 2 hours, depending on the peas. 2. While the peas cook, work on the onion — sauté it in vegetable oil. 3. When the peas are nearly done, add the grated carrot and the diced potatoes. Cook for 15 to 20 minutes. 4. Combine all the cooked ingredients and simmer for another 5 minutes. Salt to taste. At the end, stir in the minced garlic. 5. Blend the pea mixture into a smooth puree with an immersion blender. Your mash is ready!
