Mashed Potatoes with Zucchini

A dish that's both delicious and very good for you — kids and grown-ups alike will love it! Since zucchini is full of vitamins and minerals, I try to cook with it as often as I can. Paired with mashed potatoes, it turns out wonderfully smooth and mild — mild enough to win over even picky eaters. Serve it on its own or as a side with a meat dish.
