Classic Okroshka with Whey

Make a bright summer soup and put your family in a good mood! Okroshka is called a summer soup for good reason — in 85°F (30°C) heat, you won't find many takers for hot borscht (though... you never know :). I've loved okroshka since childhood; I remember both my grandmother and my mom making it. Here's my version: I swap the deli meat for boiled chicken, and instead of mineral water I use whey. To me, it tastes better. (Okroshka is a cold Russian soup.)

  • Cook the chicken breast until fully done. Boil the potatoes in their skins and hard-boil the eggs. Let everything cool.
  • Pull the chicken off the bone and cut it into pieces about the size of the other ingredients. Peel the eggs and potatoes and cut them into small, neat cubes.
  • Rinse the cucumbers and cut into small cubes.
  • At this point everything is prepped — all that's left is to combine it in one pot and stir, which is what we'll do.
  • Salt the okroshka to your taste, add the sour cream, pour in the whey, and stir.
  • Rinse the herbs (dill and green onion), chop them finely, and add them to the pot.
  • The okroshka is ready!
  • Serve it strictly cold.
