Pumpkin Purée with Cream

- Peel the pumpkin, scoop out the seeds, and cut it into cubes (the size doesn't matter). Roast in the oven until tender.
- Peel the onion and cut it into large dice. Place it in a heavy-bottomed pot (I use a cast-iron Dutch oven, but any thick-walled pot will do) and sauté in the butter for about 5 minutes.
- Peel and finely mince the garlic and ginger, add them to the onion, then stir in the spices: curry powder, cumin, coriander, cinnamon, and salt. Cook for another 2 minutes.
- Add the roasted pumpkin to the pot, pour in the chicken broth, and drop in the bay leaf. Bring to a boil, then lower the heat, cover, and simmer for 10–15 minutes.
- Remove the bay leaf and purée everything with an immersion blender until smooth.
- Whip the cream with a mixer until soft and creamy, then gently fold it into the pumpkin purée.
- Ladle the purée into individual bowls and finish with a scattering of toasted pumpkin seeds and a drizzle of yogurt.
