Pumpkin puree with cream

Peel the pumpkin, remove the seeds, cut into cubes (the size is not important) and bake in the oven until ready.

Peel the onion, cut into large cubes, put it in a thick-walled dish (I use a cast-iron goose coop, but you can take a cauldron), fry in butter for about 5 minutes.

Peel garlic and ginger, chop finely, add to the onion, and also add spices: curry, cumin, coriander, cinnamon and salt. Cook for another 2 minutes.

Put the baked pumpkin in the cauldron, pour in the chicken broth and add the bay leaf. Bring to a boil, then reduce the heat to low, cover and simmer for 10-15 minutes.

Remove the bay leaf and chop the dish using an immersion blender.

Beat the cream with a mixer until creamy, then gently mix them into the pumpkin puree.

Arrange the mashed potatoes on serving plates and do not forget to decorate with fried pumpkin seeds, pour yogurt.
