- Set a pot of water and sugar on the stove. Wash the watermelon, cut it into wedges, remove the seeds and rind, and cut the flesh into 3/4-inch (2 cm) cubes.
- As soon as the syrup comes to a boil, drop in the watermelon cubes. Bring it back to a boil, then take the pot off the heat. Let the compote steep for 30–40 minutes.
- Using a slotted spoon, pack the warm watermelon pieces into clean, sterilized jars. Return the syrup to the heat and bring it to a boil.
- Pour the hot syrup over the watermelon in the jars, cover with lids, and set the jars in a large pot of water for processing (the water should come up almost to the lids). Process 1.5-liter jars for 15 minutes and 1-liter jars for 10 minutes. Lift out the jars and seal them right away.
- Turn the jars upside down, wrap them in a blanket, and leave them until completely cool, then move them to a cool cellar or pantry.
